Hot chocolate gets a grown-up makeover with this easy hot chocolate cocktail — rich, creamy, chocolatey and just boozy enough for a cold autumn evening.

When temperatures drop, few drinks feel as comforting as a mug of hot chocolate. But this autumn, the childhood classic is getting a more grown-up treatment.

Enter the hot chocolate cocktail.

Part dessert, part nightcap, it combines warm chocolate, milk and spirits into one of the ultimate fall cocktails. And unlike elaborate seasonal drinks, it is remarkably easy to make at home.

The key is choosing a spirit that complements rather than overwhelms the chocolate.

There is no single answer.

Bourbon brings vanilla, caramel and toasted oak, making it one of the best choices for a rich autumn cocktail. Dark rumadds molasses and spice, while Irish whiskey creates a softer, warming finish.

For something lighter, try a splash of coffee liqueur. It intensifies the chocolate flavour without making the drink taste overly alcoholic.

For a more sophisticated version, combine bourbon with a small amount of coffee liqueur and finish with a pinch of sea salt.

Serves: 1
Prep time: 5 minutes

  • 200 ml whole milk
  • 50 g dark chocolate, finely chopped
  • 30 ml bourbon, dark rum or Irish whiskey
  • 15 ml coffee liqueur
  • 1 tsp maple syrup, optional
  • 1 small pinch of sea salt
  • Whipped cream, to serve
  • Dark chocolate shavings or grated nutmeg, to garnish
  1. Warm the milk. Pour the milk into a small saucepan and heat gently until steaming. Do not let it boil.
  2. Add the chocolate. Remove from the heat and whisk in the chopped dark chocolate until completely melted and smooth.
  3. Build the cocktail. Stir in the bourbon, dark rum or Irish whiskey, followed by the coffee liqueur.
  4. Balance the flavour. Add maple syrup if you prefer a sweeter drink and finish with a tiny pinch of sea salt.
  5. Serve. Pour into a heatproof mug and top with whipped cream.
  6. Garnish. Finish with dark chocolate shavings, grated nutmeg or a light dusting of cocoa powder.

The secret to a great hot chocolate cocktail is good chocolate.

Choose dark chocolate with around 60–70% cocoa rather than relying entirely on cocoa powder. The higher cocoa content gives the drink a deeper flavour and prevents it from becoming excessively sweet once the liqueur and toppings are added.

You can also experiment with spices.

A little cinnamon makes it feel unmistakably autumnal. A tiny pinch of cayenne adds warmth without making the cocktail spicy, while cardamom gives it a more aromatic, modern edge.

For an especially indulgent version, replace 50 ml of the milk with cream.

Pumpkin spice may dominate autumn menus, but the hot chocolate cocktail has a more timeless appeal.

It works after dinner, around a fire, at a winter cabin or as a late-night drink after a long autumn dinner.

And unlike many seasonal cocktails, it doesn’t require a specialist ingredient list.

Chocolate. Milk. A good spirit.

Sometimes the best fall cocktail is the one that feels like a dessert in a mug.
