The original Bisou. in the Marais is compact and intimate, with pink neon lighting, a marble bar and pink velvet stools. Mirrored panels and open shelving give the bar a playful, contemporary feel while retaining the atmosphere of a neighbourhood drinking spot.
The newer location by Canal Saint-Martin takes the concept in a more futuristic direction. Set on a corner, the space combines soft pink details with silver, postmodern-inspired elements and a minimalist bar.
Upstairs, rounded seating and small tables continue the futuristic café aesthetic, creating a space that feels distinctly different from the traditional Paris cocktail bar.

During The Drink Spectator’s visit, one cocktail combined amaretto with cinnamon, chilli, buckwheat and coconut biscuit. Another took an alcohol-free direction, pairing non-alcoholic gin with pink pepper and blood orange.
Both drinks demonstrated the strength of Bisou’s concept: rather than treating a cocktail as a fixed recipe, the ingredients are brought together to create a specific flavour profile.
